... I wonder why an organic farm doesn't try to make alcohol? I know of some nearby organic farms.  If they made alcohol they might be able to earn a small amount of money.  If they just grow organic produce and sell it, they make substantially more money. Some of this may be flaky Californian economics, where (aside from rare exceptions) you can go to the local store and find conventional oranges for $.79/lb right next to organic oranges for $3.99/lb, and people still buy the organic ones... Interestingly, the big p_layer_s have noticed the premium prices commanded by so-called organic produce, and have been plastering that label on what others argue is not organic at all.  This has led to various legislative fights, which are, as far as I know, not yet resolved.  Local groceries post their own interpretations of what organic means, so to be an informed consumer, you must read, read, and read some more.
