Hi, I previously posted a query contain a couple questions . However, on reflection I decided to expand on question. Thus this post. I am interested in finding a web site which addresses the question of food spoilage. I mean.. when does food actually become unfit for human consumption? How can various things be kept without refrigeration? For example. I asked about hard-boiled eggs because I have no information on them However, I do know that uncooked eggs can be easily kept for months without refrigeration. Does cooking shorten the storage ability? Another example. Store bought Kimchi is sold in refrigerated jars. But traditional Kimchi is fermented for months without refrigeration. How long can the store-bought Kimchi be kept un-refrigerated? Many foods have freshness date codes, but they indicate nothing about how long things can be safely eaten. In the USA, these questions are sometimes not relevant . But in much of the third world they become very important. Thus I would think there must be such information somewhere. URL suggestions?

You'll probably find information on food spoilage there. If not, just go to your favorite web search site and do a search for food spoilage to see what turns up.
